A Whiskey Sour dressed for a night out: the same tart, frothy base but with a dramatic float of dry red wine layered on top. The contrast of crimson wine against the pale foam makes it one of the most photogenic cocktails in the book.

Ingredients
- Bourbon6 cl
- Fresh lemon juice3 cl
- Sugar syrup2 cl
- Egg white1
- Dry red wine (Malbec or Shiraz)1.5 cl
Instructions
- 1Combine bourbon, lemon juice, sugar syrup and egg white in a shaker without ice.
- 2Dry shake vigorously for 10 seconds to build foam.
- 3Add ice and shake again for 12 seconds.
- 4Double strain into a rocks glass over ice.
- 5Gently float the red wine over the back of a spoon on top.
