A forgotten Gilded Age martini variation from the Tuxedo Club, New York, circa 1890. Gin, dry sherry, maraschino and orange bitters — more complex, more interesting than a Martini.

• London Dry Gin4.5 cl
• Dry sherry (Fino)1.5 cl
• Maraschino liqueur0.5 cl
• Orange bitters2 dashes
• Lemon peelto garnish

1. 1Combine all ingredients in a mixing glass with ice.
2. 2Stir for 30 seconds until very cold.
3. 3Strain into a chilled coupe or martini glass.
4. 4Express a lemon peel over the surface and drop in.
